Desiccated Coconut
Flaked and dried coconut meat, often known as desiccated coconut, comes in both unsweetened and sweetened varieties. It is a simple topping for many foods, from sweets and cereals to Asian curries, that adds taste and nutrients to the food. Desiccated coconut is a versatile ingredient that is frequently used in baking and cooking. Its mild sweetness adds texture and taste to cookies and other baked products. This shredded coconut is frequently used to make macaroons and is also frequently sprinkled over salads and sauteed vegetables.
How Desiccated Coconuts are Made?
Fully grown and matured coconuts are stored with husk for about a month for absorbing water and separation of kernels from the shell. After de-husking, the shells are removed, and the brown section, also called as testa, is scraped off. During this process, 12 to 15 percent of the kernel is converted into paring, which is then used to make oil. As a result, there is a ready market for this by-product. Coconuts that have been shelled are then split into shreds, cleaned, and ground into a powder. In order to guarantee consistent drying, the powder is then dried in a tray dryer at a temperature of between 80 and 90°C. After cooling, it is put through a vibratory screen with various mesh sizes to separate the powder into distinct categories based on mesh size.
High Fat Desiccated Coconut
High fat desiccated coconut is widely used in baked products, as well as a topping for curries and other Asian cuisines, cooked cereal, and granola. Additionally, the ice cream, bakery, confectionery, and biscuit industries utilize it. It is low in cholesterol and trans fats and high in dietary fiber, manganese, copper, and selenium, among other vital elements.
